Ingredients

150 g active sourdough starter
475 g unbleached all-purpose flour
1 large egg
255 g water
20 g sugar
10 g salt
40 g olive oil


For the Rolls

150 g pizza sauce
250 g shredded mozzarella

3¾ cups unbleached all-purpose flour
1 large egg
1 cup water
1½ tbsp sugar
1½ tsp salt
3 tbsp olive oil


For the Rolls

⅔ cup pizza sauce
2½ cups shredded mozzarella

Steps

Place the starter, flour, egg, water, sugar, and salt in the bowl of a stand mixer. Mix on medium speed for 3 to 4 minutes, or until a smooth, uniform dough forms.

Gradually add the olive oil in a thin stream while the mixer is running on medium speed to fully incorporate it. Once the oil is fully mixed in, continue kneading for 8 to 10 minutes, until the dough is soft, smooth, and slightly brioche-like. Cover the bowl with plastic wrap and let the dough ferment for 4 to 6 hours, or until it has doubled in size.

Once fermentation is complete, turn the dough out onto a work surface and roll it into a large rectangle using a rolling pin. Spread the pizza sauce evenly over the dough, sprinkle half of the mozzarella, then roll the dough into a long log.

Cut the log into 12 equal pieces and place the rolls on a baking sheet. Cover with plastic wrap and let them rise again for 2 to 3 hours, until the pizza rolls are puffed up.

Preheat the oven to 375°F (190°C). Bake the rolls for about 15 minutes. Remove from the oven, sprinkle the remaining mozzarella on top of each roll, then continue baking for another 10 minutes, until the cheese is melted and lightly golden.
