For the muffins

75 gr unsalted butter, softened
130 gr brown sugar
2 eggs, at room temperature
120 gr plain yogourt
100 gr active sourdough starter
Zest of one lemon
8 gr pure vanilla extract
40 gr milk, at room temperature
170 gr all-purpose flour
3 gr baking soda
4 gr baking powder
3 gr salt
210 gr fresh or frozen blueberries


For the crumble

20 gr brown sugar
35 gr flour
30 gr cold butter

For the muffins

⅓ cup unsalted butter, softened
⅔ cup brown sugar
2 eggs, at room temperature
½ cup plain yogourt
½ cup active sourdough starter
Zest of one lemon
1½ tsp pure vanilla extract
3 tbsp milk, at room temperature
1⅓ cup all-purpose flour
½ tsp baking soda
1 tsp baking powder
½ tsp salt
1½ cup fresh or frozen blueberries


For the crumble

2 tbsp brown sugar
¼ cup flour
2 tbsp cold butter

Steps

Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.

In a large bowl, mix together the butter, brown sugar, eggs, yogourt, sourdough starter, lemon zest, vanilla, and milk until smooth and well combined.

In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Add the dry ingredients to the wet ingredients and fold together just a few times — don’t overmix the batter.

Gently fold in the blueberries by hand. Divide the batter evenly among the 12 muffin cups.

For the crumble, combine the brown sugar, flour, and cold butter and work together with your fingertips until you get a sandy, crumbly texture. Sprinkle over the top of each muffin.

Bake in the centre of the oven at 350°F for 20 to 25 minutes, or until the muffins are golden brown and a toothpick inserted in the centre comes out clean.
