Role of the ingredients
All-purpose flour gives the muffins their structure without making them heavy.
Sourdough starter (levain discard) adds moisture, a subtle tang, and works alongside the leaveners to help the muffins rise beautifully.
Granulated sugar sweetens the batter and helps create a tender crumb.
Butter adds richness and flavour. Make sure it’s properly softened so it creams well with the sugar.
Greek yogurt keeps the muffins moist and adds a slight tang that complements the lemon perfectly.

For the crumble topping
50g all-purpose flour
40g granulated sugar
40g cold butter, cubed
4g vanilla paste
For the muffin batter
160g all-purpose flour
4g baking powder
4g baking soda
3g salt
133g granulated sugar
110g unsalted butter, softened
2 large eggs, room temperature
100g plain Greek yogurt
120g sourdough discard
Zest of 2 lemons
45g fresh lemon juice
4g vanilla extract
For the crumble topping
⅓ cup all-purpose flour
3 tbsp granulated sugar
3 tbsp cold butter, cubed
¾ tsp vanilla paste
For the muffin batter
1¼ cups all-purpose flour
1 tsp baking powder
¾ tsp baking soda
½ tsp salt
⅔ cup granulated sugar
½ cup unsalted butter, softened
2 large eggs, room temperature
⅓ cup plain Greek yogurt
½ cup sourdough discard
Zest of 2 lemons
3 tbsp fresh lemon juice
1 tsp vanilla extract

Preheat & prep
Preheat your oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners.

Make the crumble
Combine the flour, sugar, and vanilla paste. Add the cold cubed butter and work it in with your fingertips until the mixture resembles coarse, sandy crumbs. Refrigerate while you make the batter.

Cream the butter and sugar
In a large bowl, cream the softened butter and sugar together until light and fluffy, about 2–3 minutes.

Add the wet ingredients
Add the eggs one at a time, mixing well after each addition. Mix in the lemon zest, lemon juice, vanilla, sourdough discard, and Greek yogurt, and mix until combined.

Add the dry ingredients
In a separate bowl, combine the flour, baking powder, baking soda, and salt, and stir to mix. Gently fold into the wet mixture by hand until just combined — do not overmix.

Rest the batter
Let the batter rest for 15 minutes before scooping. This helps develop the structure for a better rise.

Fill the muffin cups
Fill every other muffin cup (6 at a time) to allow room for the muffins to rise without running into each other. Fill each liner really full — about 6–8 tablespoons of batter. Top each muffin generously with the chilled crumble.

Bake
Bake at 425°F for the first 7 minutes, then lower the oven temperature to 350°F (175°C) and continue baking for 11–15 minutes, or until a toothpick inserted in the centre comes out clean and the crumble is golden.
Cool
Let cool in the pan for 5 minutes before transferring to a wire rack. Repeat with the remaining batter.
