The role of each ingredient
The active starter is the engine of the recipe. It lifts the dough slowly, develops the aromas and gives that slightly open, airy texture so characteristic of sourdough viennoiseries.
The unbleached all-purpose flour provides enough structure without making the dough too stiff — essential for a supple and light brioche.
The egg enriches the dough, contributes to the golden colour and helps bind everything together.
The warm whole milk hydrates the dough gently and adds richness.
The sugar feeds the starter, tenderizes the crumb and promotes that beautiful golden crust during baking.

Tips for success
Add the butter gradually. Incorporate it in small amounts, only once the previous addition is fully absorbed. This is the key to a smooth, non-greasy dough.
Long kneading, perfect results. 15 to 20 minutes of kneading after adding the butter is necessary to develop the gluten and achieve that shiny, elastic texture.
Watch the fermentation, not the clock. The dough should have almost doubled in volume. Depending on the temperature of your kitchen and the activity of your starter, this can take anywhere from 4 to 8 hours.
The indentation is the key step. A lightly buttered glass or any small round object allows you to create a well-defined hollow that will hold the filling without overflowing during baking.
The streusel should hold together in small clumps. If the texture is too fine, the streusel will melt during baking. Work it until you get pieces that hold their shape.
Bake until golden. Colour is your best indicator — a well-browned bun will be cooked through.

Storage
These buns are best enjoyed the same day, still slightly warm. Store leftovers in an airtight container at room temperature for up to 2 days. You can reheat them for a few seconds in the microwave or a few minutes in a low oven to bring back their softness. They also freeze very well (without the filling if possible), and can be reheated directly in the oven at 325°F.

Make the dough
In the bowl of a stand mixer, combine the starter, flour, egg, milk, sugar and salt. Knead on medium speed for about 4 minutes, until you get a firm, cohesive dough. Gradually incorporate the softened butter, a small amount at a time. Continue kneading for 15 to 20 minutes, until the dough is smooth, shiny and elastic — it should pull away cleanly from the sides of the bowl.

First fermentation
Cover the bowl and let the dough ferment at room temperature for 4 to 8 hours, or until it has almost doubled in volume.

Shape the buns
Divide the dough into 12 equal portions and shape into smooth balls. Place on a parchment-lined baking sheet. Cover and let rise for 1 to 2 hours, until they are well puffed and pillowy.

Make the filling
In a bowl, mix the cream cheese, sugar and lemon zest until smooth and homogeneous. Set aside.

Make the streusel
In another bowl, combine the flour, brown sugar, salt and cold butter with your fingertips until you get small pieces that hold together. Refrigerate until ready to use.

Fill the buns
Using a lightly buttered glass or small round object, press a well-defined indentation into the centre of each bun. Spoon a generous amount of cream cheese filling into each hollow, then add 1 tsp of jam on top. Sprinkle with streusel.

Bake
Preheat the oven to 350°F (175°C). Bake the buns in the centre of the oven for 15 to 20 minutes, or until they are golden brown and cooked through. Let cool slightly before enjoying.
