Ingredients
For the bread
120 g active sourdough starter
500 g unbleached all-purpose flour
180 g filtered water
1 egg
110 g shredded carrots
80 g sugar
8 g fine sea salt
5 g ground cinnamon
50 g softened butter
For the whipped cream cheese butter
60 g unsalted butter, room temperature
50 g cream cheese
120 g powdered sugar
4 g vanilla paste
For the bread
½ cup active sourdough starter
4 cups unbleached all-purpose flour
¾ cup filtered water
1 egg
1 cup shredded carrots (lightly packed)
⅓ cup sugar
1½ tsp fine sea salt
1 tsp ground cinnamon
3½ tbsp softened butter
For the whipped cream cheese butter
¼ cup unsalted butter, room temperature
3 tbsp cream cheese
1 cup powdered sugar
¾ tsp vanilla paste

Mix the dough
In the bowl of your stand mixer, add all the bread ingredients. Mix on low speed for 1 to 2 minutes. The dough will look quite thick at first — that’s completely normal! The carrots will release water as the dough mixes, so we intentionally start with less water.

Knead
Increase the speed to medium (speed 4 to 6) and knead for 8 to 10 minutes, until you get a smooth, elastic ball of dough.

Bulk fermentation
Cover the bowl with plastic wrap and let ferment at room temperature for 4 to 6 hours, or until the dough has doubled in volume.

Rest
Once the dough has doubled in size and looks light and airy, lightly flour your work surface and gently transfer the dough. Lift the dough a few times to shape it into a ball without tightening it too much. Let it rest uncovered for 25 minutes.

Shape
Turn the dough over and gently stretch each side before folding it toward the center. Then carefully roll the dough on your work surface while turning it to form a nice, tight round boule. Place it in a lightly floured proofing basket.

Overnight cold proof
Cover with a clean cloth and place the basket in the refrigerator for an overnight fermentation.

Preheat
Place a Dutch oven in your oven and preheat to 500°F (260°C). While the oven heats, remove your dough from the refrigerator.

Bake
Gently turn your dough out of its banneton onto a piece of parchment paper and score the top deeply with a lame. Carefully add a few ice cubes to the preheated Dutch oven, then transfer the dough (on the parchment) into the pot. Cover and bake for 10 minutes at 500°F (260°C), then reduce the heat to 450°F (232°C) and bake for an additional 30 minutes. The internal temperature should reach about 207°F (90°C).
Cool
Allow the bread to cool on a wire rack at room temperature for 2 to 4 hours before slicing. (We know — the hardest part!)

In a bowl, beat together the butter and cream cheese until light and creamy. Add the powdered sugar and vanilla paste, then beat until smooth and fluffy.
