140 g all-purpose flour
8 g (2 tsp) baking powder
4 g (½ tsp) salt
110 g unsalted butter
200 g sugar
10 g (1 tbsp) vanilla extract
2 large eggs, room temperature
100 g active sourdough starter
140 g whole milk


For the marbled caramel frosting

200 g unsalted butter, softened
400 g powdered sugar
5 g vanilla paste or extract
30 g caramel
30 g cream

60 g extra caramel for marbling

For the cupcakes

1 cup all-purpose flour
2 tsp baking powder
½ tsp salt
½ cup unsalted butter
1 cup sugar
1 tbsp vanilla extract
2 large eggs, room temperature
½ cup active sourdough starter
½ cup whole milk


For the marbled caramel frosting

¾ cup unsalted butter, softened
3 ¼ cups powdered sugar
1 tsp vanilla paste or extract
2 tbsp caramel
2 tbsp cream

4 tbsp extra caramel for marbling

Preheat the oven to 350 °F (177 °C) and line a 12-cup muffin pan with cupcake liners (or use mini liners for 48 mini cupcakes).

In a large bowl, sift together the flour, baking powder, and salt. Set aside.

In another bowl, beat the butter and sugar on high speed for 2–3 minutes until the mixture becomes lighter, creamy, and fluffy. Add the eggs, levain, and vanilla, and mix well. Then add the milk. The batter may look slightly grainy or lumpy—that’s completely normal. At low speed, add the flour mixture, mixing just enough to combine to keep the cupcakes tender.

Divide the batter into cupcake liners, filling each about 2/3 full. Bake in the preheated oven at 177 °C (350 °F) for about 15 minutes for mini cupcakes or up to 20 minutes for large ones, until a toothpick inserted in the center comes out clean and the tops are golden. Let cool completely before frosting.

For the frosting, in a large bowl, beat the softened butter at medium-high speed for 2–3 minutes until light and airy. Add powdered sugar, vanilla, caramel, and cream, and beat about 30 seconds just to combine, without overmixing.

To create the marbled effect, drop the extra 60 g of caramel in small spots over the frosting and swirl with a spatula or toothpick, without fully mixing to keep the marbled look.

Frost the cooled cupcakes using a piping bag or spatula. For an extra indulgent look, drizzle a few strands of caramel on top.

Store cupcakes 2–3 days at room temperature in an airtight container, or refrigerate if the frosting is very creamy. For even more flavor, use a well-fed, active sourdough starter.
