Full of warmth and sweetness, balanced by a gentle hint of sourdough tang, this is the ultimate any-occasion brunch: quick to make, indulgent, and always satisfying.

When I developed this recipe, I wanted something fast and simple, but with that little “wow” factor from the very first bite. Mission accomplished: these waffles have that contrast we all love — soft inside, crispy outside — and they pair beautifully with just about everything: whipped cream, fresh fruit, homemade compote, or a simple drizzle of maple syrup.

Why use sourdough?

Sourdough adds a unique dimension: it makes the waffles softer, more flavourful, and gives them that lightly tangy note that balances the sweetness of the sugar. It also extends their freshness — even reheated, they stay tender and delicious.

Why whip the eggs with the sugar?

Whipping the eggs with the sugar is the secret to that perfect softness. By beating them vigorously, you incorporate air into the mixture; that air then gets trapped by the flour and sourdough during cooking. It’s what creates that light, almost soufflé-like texture we love.
Without this step, the batter would be denser and the waffles would lose that irresistible fluffy quality.

Tips for perfect waffles every time

A few small details make all the difference. Use an active sourdough starter (or one from the day before, kept in the fridge) — it will give the batter all of its lift and flavour. Whip the eggs and sugar for a good five minutes at least; this is what creates the airy texture you’re looking for. Once the flour is added, fold gently, just enough to bring the batter together without deflating the incorporated air. Pour about ½ cup of batter per waffle into your preheated waffle iron, and serve them right away: still crispy on the outside and melt-in-your-mouth on the inside, they’re simply irresistible.

Storage

Store waffles in an airtight container at room temperature for up to 2 days, or freeze for up to 2 months.
To bring back their crunch: 3 to 4 minutes in the toaster or in the oven at 350°F (180°C).

3 large eggs
60 g sugar
230 g all-purpose flour (spooned and levelled)
10 g baking powder
3 g baking soda
4 g salt
150 g sourdough starter
400 g milk
50 g unsalted butter, melted and slightly cooled
5 g pure vanilla extract

For the waffles

¼ cup sugar
1 ¾ cups all-purpose flour (spooned and levelled)
1½ tsp baking powder
1 tsp baking soda
½ tsp salt
½ cup sourdough starter
1⅔ cups milk
4 tbsp unsalted butter, melted and slightly cooled
1 tsp pure vanilla extract

Steps

In the bowl of a stand mixer, beat the eggs and sugar on high speed for 3 to 5 minutes, until the mixture thickens and turns pale.

In a small bowl, whisk together the flour, baking powder, baking soda, and salt.

In a separate bowl, whisk together the sourdough starter, milk, melted butter, and vanilla.

Alternately fold the dry ingredients and the liquid mixture into the whipped eggs. Mix gently, just until a smooth batter forms.

Pour about ½ cup (125 ml) of batter per waffle into the preheated waffle iron. Cook until golden and crispy.
