Easy Sourdough Bread — 4 Ingredients, No Knead

This bread is proof that making sourdough at home doesn’t have to be complicated. Just 4 ingredients, 10 minutes of active prep, and a result that impresses every single time — a golden, crispy crust, an airy and flavourful crumb, and that smell in the house that’s simply priceless. The fermentation does all the work for you. All you have to do is be patient.

What is a no-knead bread?

It’s exactly what it sounds like! A bread you mix together quickly without kneading, without any complicated technique, and then let time do all the work for you. You don’t need to be a baker to nail this one. Just active starter, flour, water, and salt — and a whole lot of patience.

Why is warm water so important?

Warm to hot water is what activates and wakes up your starter. Water that’s too cold will slow down fermentation and your bread will take much longer to rise — or won’t rise at all. We’re aiming for around 35 to 40°C, like a comfortable bath temperature. Not boiling — that would kill your starter!

The dough looks really rough at first — is that normal?

100% normal! When you first mix it, you just want the dough to come together into a shaggy, uneven ball. Fermentation will do all the gluten development work over the hours that follow. No need to aim for a smooth, pretty dough at this stage.

Why put the bread in the fridge overnight?

The cold slows down fermentation and allows the bread to develop much more complex, deep flavours. It also makes baking easier — cold dough is firmer and much easier to handle. And the bonus? You prep your bread the night before and bake it fresh the next morning!

Why put ice in the oven?

The steam created by the ice is the secret to a beautiful golden, crispy crust! It keeps the surface of the bread supple during the first few minutes of baking, which allows it to rise and open up properly. Without steam, the crust sets too quickly and the bread doesn’t have time to bloom the way it should.

How do I know when my bread is done?

The best indicator is the internal temperature — you’re aiming for 96 to 98°C at the centre of the loaf. Visually, the crust should be deeply golden, almost caramel-coloured. You can also tap the bottom of the bread — if it sounds hollow, you’re good to go!

For the bread

200 g active sourdough starter
450 g unbleached all-purpose flour
290 g filtered warm to hot water (35–40°C)
10 g fine sea salt

1 cup of ice (for baking)

¾ cup active sourdough starter
3 ¾ cups unbleached all-purpose flour
1 ¼ cup filtered warm to hot water
1 ¾ tsp fine sea salt

1 cup of ice (for baking)

In a large bowl, pour in the water and starter. Whisk well to dissolve the starter. Add the flour and salt. Mix until you get a shaggy ball — it doesn’t need to look pretty, just hold together!

Cover the bowl and let rest at room temperature for 5 to 8 hours, until the dough has risen nicely and is full of bubbles.

On a lightly floured surface, shape the dough into a tight, smooth ball. Place it in a floured banneton or bowl, cover, and refrigerate overnight.

The next morning, preheat your oven to 500°F (260°C) with a Dutch oven inside for at least 30 minutes.

Place the bread on a piece of parchment paper. Pour one cup of ice into the bottom of the hot Dutch oven, then lower the bread in with the parchment paper. Cover and bake immediately.

Bake at 500°F (260°C) for 20 minutes with the lid on. Remove the lid, reduce the temperature to 450°F (230°C), and continue baking for 20 to 25 minutes, until the crust is deeply golden.

The bread is ready when the internal temperature reaches 96 to 98°C. Let cool on a wire rack for at least 2 hours before slicing — the bread continues to bake on the inside!
