A couple of weeks ago while browsing the aisles at the grocery store, I found this pretty awesome product. Tofurky’s chorizo is so tasty, has an awesome texture and most of all is vegan. I can guarantee, no one will believe you when you tell them this chorizo isn’t meat. It’s that good!

Vegetarian Tex-Mex salad

Ingredients
For the salad
2/3 cup of Tofurky’s Chorizo
4 cups of salad
1 cup of cooked corn
1 avocado, sliced
1/2 cup of salsa Fresca
2 tbsp. of ranch salad dressing
Preparation
- In a large pan, over medium heat, grill the chorizo for 5 to 7 minutes, making sure to stir frequently.
- Wash and dry the salad.
- In a large bowl, add the salad, the corn, the avocado slices, the salsa Fresca, the ranch vinaigrette and top with the chorizo.
- Mix well and enjoy!
