I’m always on the hunt for new flavor combination, to help me reduce my meat intake. I recently discovered this little tip, which is to add sun-dried tomato to your Caesar salad to replace the bacon. It’s so tasty, so much that you won’t be missing the bacon… Plus, you just saved the life of a cute little piggy, why not?

Vegetarian Caesar salad with crispy tofu croutons

For the salad
3 cups of salad, washed, dried and chopped
6 dried tomatoes, finely chopped
2 tbsp. grated Parmesan cheese
1 green onion, finely chopped
Caesar salad dressing, of your choice
For the tofu croutons
- In a large bowl, add the chopped salad, the salad dressing and mix until the salad is evenly coated.
- Add the remaining ingredients as well as the crispy tofu croutons.
