I started BLW with Téo when he was about six months old. I wanted to create an easy recipe, that I could make in large quantity and which I could freeze if I felt like it. This way, I would always have something healthy on hand to feed my baby during the busy days (or for the lazy mornings ;)). It really gave me a peace of mind, knowing that these Vegetable and Quinoa balls are a complete meal in itself. #YAY

Ingredients
For the quinoa balls
2 cups cooked quinoa
2 eggs, lightly beaten
1 cup shredded broccoli
1 cup shredded carrot
1 cup shredded cheese
1 onion, finely chopped
1 tbsp. garlic, finely chopped
1/2 cup all-purpose flour
1/4 cup oat cereal for baby
1 tsp. paprika
2 pinches black pepper
Preparation
- Preheat the oven at 350F.
- Mix all ingredients together and form balls.
- Put the balls in a muffin tin and bake for 30 minutes.
- Take the balls out of the oven and let them rest for 5 minutes.
Tips and tricks
You can customize the recipe by adding the vegetables you have on hand. You can also add a different type of baby cereals or simply add whole-wheat flour instead of all-purpose flour per example.
