Super Easy Cinnamon Bites (Overnight)
Ingredients
For the dough
80 g active or inactive sourdough starter – Flora dehydrated sourdough
295 g filtered water
320 g unbleached all-purpose flour
80 g whole wheat flour
8 g fine salt
For the cinnamon sugar
70 g brown sugar
3 g ground cinnamon
For the icing
100 g cream cheese, at room temperature
20 g 35% cream
125 g powdered sugar
2 g vanilla bean paste
Steps
1. The night before, in a bowl, mix the sourdough starter and water. Add the flours and salt, then mix until a dough ball forms.
2. In another bowl, mix the brown sugar and cinnamon. Gently stretch the dough and fold in the cinnamon sugar roughly. The goal is to have little streaks of cinnamon in the bites, so don’t worry if it’s not perfect.
3. Cover the dough with plastic wrap and let it ferment 10–12 hours on the counter at room temperature.
4. The next morning, your dough should have risen nicely.
5. Preheat your oven to 375 °F (190 °C). Line a baking sheet with parchment paper. Using kitchen scissors, cut the dough directly from the bowl and place the bites on the sheet. Be careful not to handle them too much to avoid deflating the dough.
6. Bake in the centre of the oven for 20–25 minutes, or until golden brown.
7. Let cool for a few minutes. Meanwhile, prepare the glaze by whisking all the ingredients together until smooth and creamy.
8. Spread a generous amount of glaze over the cinnamon bites and serve immediately 🤍
