Sourdough scones: the little treat that transforms your morning
This is hands-down my go-to weekend recipe. The one I make when I want something good, without spending hours in the kitchen.
My kids love them — they ask for more every single time. And honestly, it’s the kind of recipe that always impresses. Whether you’re hosting or just want to treat your kids (or yourself), it feels special without being complicated.
It’s simple, quick, and made with ingredients you already have. In just a few minutes, your dough is ready… and shortly after, your kitchen smells like a cozy little bakery.
And if you want to make them a bit “healthier,” you can easily swap part of the flour for whole wheat flour. It works beautifully while keeping that soft, indulgent texture.

The ingredients: simple, fresh, and delicious
For me, the magic always starts with the ingredients. For these scones, you keep it simple: flour, sugar, salt, baking powder, butter, sourdough starter, milk, and a touch of vanilla. And of course, a little cream and jam for serving.
Nothing complicated here. Just ingredients you likely already have in your kitchen, that come together to create something truly special.
The role of each ingredient
• Flour: gives structure to your scones.
• Butter: brings that rich, tender, slightly flaky texture we love.
• Sourdough starter: adds a unique depth of flavour, slightly tangy.
• Milk and vanilla: make the dough soft, fragrant, and well hydrated.
• Sugar and salt: balance the flavours and enhance everything else.
• Baking powder: helps the scones rise and stay light.
When you understand what each ingredient does, you gain confidence… and it makes all the difference in the kitchen.

Why grate ultra-cold butter
It’s a small detail… but it changes everything. Your butter should be very cold — even slightly frozen if possible. Why? Because when you grate it, you get small pieces evenly distributed throughout the dough without overworking it.
The result:
• more tender scones
• a slightly flaky texture
• and a dough that stays easy to handle
If your butter is too soft, it will fully blend into the dough — and you’ll lose that light, airy texture we’re after. So yes: cold, grated butter… and you’ve just levelled up your scones effortlessly. ✨

Scones: a quick homemade croissant in 15 minutes
What I love most about these scones is how quick and comforting they are. In about 15 minutes, your dough is ready, and soon after, your whole house smells amazing.
To me, they’re like a quick homemade croissant you can enjoy any morning. My kids absolutely love them — they keep asking for more. Honestly, it’s like a breakfast treat.

Why you’ll love them
You’ll love this recipe because it’s:
• Simple: no need to be a sourdough expert
• Quick: perfect for busy mornings
• Comforting: the smell, the texture, the taste… it’s all there
• Flexible: you can switch up the toppings with whatever you have on hand

Tips for perfect scones
To get perfect scones every time, a few small details make all the difference. First, avoid overworking the dough: mix just enough for it to come together, otherwise your scones may turn out dense instead of tender. Keep all your ingredients cold — especially the butter — and don’t hesitate to chill the dough before baking, it really helps with texture.
When handling the dough, expect it to be slightly sticky — that’s normal. Lightly flour your hands to help, without adding too much. When cutting your scones, use a firm motion instead of pressing down on the dough, which helps keep them light and airy.
Finally, keep an eye on baking time, as every oven is different. Your scones should be golden on the outside while staying soft inside. And most importantly, have fun with it: add lemon zest, fruit, or even chocolate chips to make them your own.

Sourdough Scones
This is the kind of recipe that quickly becomes a household staple. There are mornings when you don’t have time.
And then there are mornings when, despite everything, you still want to create a small special moment.
These sourdough scones are exactly that. A quick, stress-free recipe that makes you feel like you’ve made something extra… without spending hours on it. The dough comes together in minutes, the smell from the oven is incredible, and the result? Golden scones, soft on the inside, perfect with a little cream and jam. It’s the kind of recipe you make once… and it quickly becomes a favourite at home.

Ingredients
For the scones
200 g all-purpose flour
35 g sugar
4 g salt
10 g (2 ½ tsp) baking powder
115 g unsalted butter, grated
100 g active sourdough starter
125 g whole milk
4 g (1 ½ tsp) pure vanilla extract
2 tbsp cream (for brushing)
For the whipped cream
60 g cream cheese, room temperature
110 g 35% cream
30 g powdered sugar
2 g (½ tsp) vanilla extract
For the scones
1 2/3 cups all-purpose flour
3 tbsp sugar
3/4 tsp salt
2 ½ tsp baking powder
1/2 cup unsalted butter, grated
1/2 cup active sourdough starter
1/2 cup whole milk
1 ½ tsp pure vanilla extract
2 tbsp cream (for brushing)
For the whipped cream
1/4 cup cream cheese, room temperature
1/2 cup 35% cream
2 ½ tbsp powdered sugar
1/2 tsp vanilla extract
Steps
1
In a bowl, mix the flour, sugar, salt, and baking powder. Add the very cold butter and mix until you get a sandy texture.
2
In another bowl, whisk together the sourdough starter, milk, and vanilla extract until smooth and lump-free.
3
Add the wet mixture to the dry ingredients and stir with a wooden spoon just until a rough dough forms. You’re not aiming for a perfectly smooth dough — it just needs to hold together.
4
Place the dough on a parchment-lined baking sheet and flatten it into a circle about 20 cm (8 inches) in diameter. Cut into 8 triangles. Gently separate the pieces and refrigerate for 15 minutes.
5
Preheat the oven to 350°F (175°C). Before baking, brush the scones with cream and bake for 20 to 25 minutes, until golden.
6
Meanwhile, prepare the cream. In a bowl, whisk the cream cheese, cream, sugar, and vanilla until thick. Do not overwhip, or the cream may split.
7
Once the scones come out of the oven, let them cool slightly. Gently slice them in half, spread with the creamy filling, and add your favourite jam. And there you go — every bite becomes a little moment of pure comfort.
