Ingredients

For the dough

160 g active sourdough starter
470 g unbleached all-purpose flour
2 large eggs
220 g warm whole milk
60 g sugar
8 g salt
80 g softened unsalted butter


Cinnamon filling

200 g brown sugar
4 g ground cinnamon
85 g softened butter


Frosting

115 g cream cheese (room temperature)
30 g unsalted butter (room temperature)
150 g powdered sugar
3 g vanilla extract

For the dough

⅔ cup active sourdough starter
3 ¾ cups unbleached all-purpose flour
2 large eggs
¾ cup warm whole milk
¼ cup sugar
1 ½ tsp salt
⅓ cup softened unsalted butter


Cinnamon filling

1 cup brown sugar
1 ½ tsp ground cinnamon
⅓ cup softened butter

Frosting

½ cup cream cheese (room temperature)
2 tbsp unsalted butter (room temperature)
1 ¼ cups powdered sugar
¾ tsp vanilla extract

Steps

In the bowl of a stand mixer, combine the sourdough starter, flour, eggs, milk, sugar, and salt. Knead on medium speed for about 4 minutes, until a firm dough forms.

Gradually add the softened butter, a small amount at a time. Continue kneading for 15–20 minutes, until the dough is smooth, shiny, and elastic.

Cover and let ferment at room temperature for 4 to 8 hours, or until the dough has nearly doubled in size.

Mix the cinnamon filling ingredients and set aside.

Roll the dough into a large rectangle on a lightly floured surface. Spread the butter, then sprinkle the brown sugar and cinnamon mixture evenly. Roll tightly and cut into 12 rolls.

Place in a parchment-lined baking dish. Cover and let rise for 2 to 3 hours, until puffy.

Preheat the oven to 350°F (180°C) and bake for 25 to 30 minutes, until golden brown.

Prepare the frosting by beating the butter and cream cheese until smooth. Add the powdered sugar and vanilla, then whip until light and creamy.
