In the past couple weeks, all we have been eating is these pumpkin energy balls. Humm.. Probably because it’s pumpkin season! But now that Halloween is behind, I thought you might have a couple pumpkins that needed to be used.
So here is my simple recipe of pumpkin pie energy ball for everyone to enjoy as a snack, as a dessert or even for breakfast!
Pumpkin pie energy balls
12 energy balls
Freezer friendly | Vegan | To go
For the energy balls
1/4 cup of pumpkin puree
1/2 cup of dried apricot
1/2 cup of dry grapes
1 cup of cashew
2 tbsp. of chia seeds
1 tbsp. of maple syrup
1 tbsp. of vanilla extract
1 pinch of salt
- In a food processor, add all the ingredients and mix until well combined.
- Using your hands, portion the dough into balls of the desired size.
- Refrigerate for 30 minutes or until the balls are firm.
- Enjoy !
