Quick Speculoos Twists (No Fermentation, Extra Crunch!)
These speculoos twists are seriously delicious! 🌀 A perfect way to use up leftover sourdough starter with zero hassle—and have a treat ready in no time. 😍 Crispy on the outside, soft on the inside, they come together in minutes and don’t need any fermentation.
The starter-enriched dough gets a lightly flaky texture thanks to grated cold butter—a little trick for a super light, tasty result. And that gooey speculoos spread in the middle… one bite and you’re hooked! Simple, quick, and so satisfying—you’ll want to make another batch right away. 💛

Flaky Sourdough Speculoos Twists
Ingredients
For the dough
150 g all-purpose flour
35 g sugar
2 tsp baking powder
4 g salt
110 g cold butter, grated
140 g sourdough starter (active or discard)
65 g cold milk
For the filling
1/2 cup speculoos spread
For the egg wash
1 egg yolk
2 tbsp milk
Steps
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix the flour, sugar, baking powder, and salt. Grate the cold butter using the large holes of a box grater, then mix it into the flour until evenly distributed.
3. In another bowl, whisk together the sourdough starter and milk. Pour this into the dry ingredients and mix with a spatula until a soft, cohesive dough forms.
4. On a lightly floured surface, knead the dough 2–3 times, just until it comes together. Roll it into a rectangle about 0.3 cm thick.
5. Spread the speculoos on one half of the dough, then fold the other half over. Cut into 8 equal rectangles. For each rectangle, cut lengthwise down the center, leaving about 2 cm uncut at the folded end. Gently twist each strip to form a rope, then coil it into a spiral.
6. Place the twists on the prepared baking sheet and brush with the egg wash. Bake for 16–18 minutes, or until nicely golden.
7. Let cool slightly before enjoying. Perfect with coffee or for a cozy brunch! ☕✨
