3/4 cup of plain Greek yogurt
A small bunch of fresh cilantro, to taste
2 tbsp. of olive oil
1 tsp. of finely chopped garlic
The juice of 1/2 lemon
Salt and pepper

2 cups of baby spinach
1/2 cup of yellow pepper, seeded and diced
1/2 cup of black olive, pitted and sliced
1/2 cup of corn kernels, cooked
1/2 cup of black beans, cooked
12 cherry tomatoes, sliced in half
2 tbsp. of crispy onions
2 tbsp. of crunchy tortilla strips

  1. In a food processor, add all the ingredients “FOR THE VINAIGRETTE” and blend until smooth. Keep aside.
  2. In 2 separate bowls, add all of the ingredients “FOR THE SALAD” making sure to divide them equally. I suggest adding the ingredients following the order listed above… or not! (I told you it was an easy recipe!! 😉 )
  3. Add the vinaigrette and season with salt and pepper.
