2/3 cup of Tofurky’s Chorizo
4 cups of salad
1 cup of cooked corn
1 avocado, sliced
1/2 cup of salsa Fresca
2 tbsp. of ranch salad dressing

  1. In a large pan, over medium heat, grill the chorizo for 5 to 7 minutes, making sure to stir frequently.
  2. Wash and dry the salad.
  3. In a large bowl, add the salad, the corn, the avocado slices, the salsa Fresca, the ranch vinaigrette and top with the chorizo.
  4. Mix well and enjoy!
