Pumpkin pie energy balls

In the past couple weeks, all we have been eating is these pumpkin energy balls. Humm.. Probably because it’s pumpkin season! But now that Halloween is behind, I thought you might have a couple pumpkins that needed to be used.

So here is my simple recipe of pumpkin pie energy ball for everyone to enjoy as a snack, as a dessert or even for breakfast!

Pumpkin pie energy balls

12 energy balls

Ingrédients

For the energy balls

1/4 cup of pumpkin puree
1/2 cup of dried apricot
1/2 cup of dry grapes
1 cup of cashew
2 tbsp. of chia seeds
1 tbsp. of maple syrup
1 tbsp. of vanilla extract
1 pinch of salt

Preparation

  1. In a food processor, add all the ingredients and mix until well combined.
  2. Using your hands, portion the dough into balls of the desired size.
  3. Refrigerate for 30 minutes or until the balls are firm.
  4. Enjoy !
