Ingredients

For the focaccia

1 cup of warm water
1 tsp. of quick-rise yeast
1 tsp. of sugar
1 ½ tsp. of salt
1/4 cup of olive oil
2 ½ cups of all-purpose flour

For the fresh herbs

1/4 cup of olive oil
2 sprigs of rosemary, chopped
2 sprigs of thyme
2 garlic cloves, finely chopped
A big pinch of salt

Preparation

  1. In a bowl, add all of the ingredients for the focaccia in the order indicated above. Mix until a ball of dough is obtained. Knead 5 minutes by hand, or a few minutes with a stand mixer.
  2. Cover with a clean cloth and let it stand for 1 hour.
  3. Spread the dough ball in an ovenproof rectangular baking dish previously oiled. Flatten the dough to until it’s 2 centimetres thick. Cover with a clean cloth and let it stand for 20 minutes.
  4. In a small bowl, add all the ingredients for the fresh herbs.
  5. Preheat the oven to 400 F.
  6. Once the 20 minutes of rest have passed, remove the cloth. Add the oil and fresh herb mixture and with your fingers, create holes to let the oil soak in. Make sure that the oil is spread evenly.
  7. Bake for 20 minutes or until the focaccia is golden brown.
